We asked Eric to help with catering for our little Friendsgiving recently. When we reached out to him, he was ecstatic in doing his best to make this Thanksgiving event a success. He was very prompt and thorough in his communication with us when planning ahead for the day of the event. He provided us with a timeline for when he would arrive to start cooking and when he would expect to be done by as well. We gave him complete control over the creative and culinary aspects of the event, ranging from what meal items will be provided to what flavors can be expected. On the day of the event, Eric had arrived early to prep in our kitchen. He provided most of the ingredients, which we reimbursed him for, and we provided the turkey he would cook for us. Admittedly, we did not provide much of a cooking environment for him, but he made the most out of it using our oven and our electric stoves. After many hours of his hard work, we were in awe with what he curated for our event. Firstly, the centerpiece of this menu featured a young turkey cooked to perfection. The aromatic herbs and spices tingled our senses with delight. The meat and skin were full of flavor. It was nice and juicy in every part, including the breast. I was never a fan of Thanksgiving turkey due to how dry it can be, but Eric made me a fan after tasting how juicy it turned out! Next, the hidden star of the show: the stuffing. Eric had made this from scratch, demonstrating how simple ingredients could display so much unique flavors when combined together. Words really cannot describe the decadent flavors that were present. I can vividly remember the crispy bits of bread, the diced and dried apple bits, and the addicting flavors from the savory aromatics all dancing in my mouth. Alongside our main dish, we also had some cut potatoes, green beans, and homemade gravy. Each side dish paired beautifully with the turkey. Everything tasted amazing. We were full to our heart’s content. We expected everything to be delicious. We did not expect to be blown away from a fully curated Thanksgiving experience.
