He was the lead cook at Shula’s 347 in the Sheridan, within 6 weeks won the MVP ball as most valuable player. Several months later he was promoted to Sous Chef. From there he was Sous Chef at The Omni Hotel in Downtown Fort Worth. He assisted in opening The Convention Center Omni Downtown Dallas. He Assisted in opening the TX Restaurant in the Le Meridian Stoneleigh, a historic hotel in Uptown Dallas. Randy competed in The Battle Of The Chefs, a charity cookoff at the American Airlines Center, he placed 2nd (1st Perry’s Steakhouse, 3rd The Zaza Hotel) From there he was Executive Sous Chef and Acting Executive Chef at The Omni Park West, Dallas. He Opened Kona Grill soon after on West 7th Street & University in Fort Worth. Randy came back to his hometown and opened Refuel Bar & Grill in Cleburne, TX. After a successful opening of Refuel he proceeded to expand his career and took over an Executive Chef position at Lone Oak Ranch & Retreat in Gainesville, TX. After traveling from Cleburne to Gainesville for 2 years Randy quickly returned closer to home to pursue his passion for working with the youth and took on an Executive Chef position at a prestigious nationwide catering company, SAGE Dining Services. SAGE specializes in private school & universities. Randy spent roughly 5 years at All Saints Episcopal Private School. During that time Randy and his wife, Salena Ishie, started their own catering & events company, Ishie’s Catering & Events. Randy does the food and Salena is an event planner / decorator and is acting Director of Marketing for The World Famous Chisholm Trail Outdoor Museum in Cleburne, TX. Randy & Salena have 3 children ages 7, 11, & 16 and currently live in Cleburne. As of July 2021 Randy has accepted a Chef position at the Stadium Club @ The Dallas Cowboy’s AT&T Stadium. Along with the Cowboys Randy has cooked for the band Poison, sent up room service for B.B. King, Wesley Snipes, and Ethan Hawk. He catered the banquets for the Super Bowl 2012, Steelers vs Green Bay, as well as separate NFL events featuring the Buffalo Bills, Seattle Seahawks, & many more. For your event to be reserved onto our schedule a mandatory non refundable retainer fee of no less than half of the total amount quoted is due no later than 3 days from when you receive your official Ishie’s quote to establish a business—client relationship with Ishies Catering & Events. Please be advised that due to the industry fluctuations all quotes do expire on the 5th day, no exceptions. Ishie’s Catering & Events does not book through 3rd parties, You must confirm you are booking with us, No Exceptions. Thumbtack is our only booking portal. Have had their catering at several of our events. The presentation is top notch and the food is always incredible. Would highly recommend for any event large or small. You won’t be disappointed.
