I recently started a food pop-up after spending the last decade working in upscale and fine dining restaurants in Chicago, Los Angeles, and San Diego. As the world has shifted post COVID, I have watched food prices rise, restaurants struggle, and ultimately have changed my perspective on food + how to make a good meal more accessible to all.
