My journey started with a passion for great barbecue and the desire to bring Central Texas-style cooking to Colorado. Over time, I’ve honed my skills, studying the art of smoking meats and learning from some of the best in the industry, to create the mouthwatering flavors we serve today.
What I love most about this work is seeing the smiles on people’s faces when they take that first bite. There’s nothing better than knowing we’ve made someone’s event extra special with our food. From the slow process of smoking brisket for 18 hours to the care we put into crafting every side dish, the heart of what we do is about creating an experience people will remember.

We’re the only food trailer in Colorado with a 500 smoker, allowing us to serve up true Central Texas-style barbecue right from our trailer.
