Charcole Dole was perfect for our park themed wedding. The food was delicious and smelled great cooking on site. The food truck and smoker made the experience fun and unique. The service that was provided had great attention to detail. Our guests were well taken care of and wait staff made sure the head table was served as a priority so the bride and groom could eat without being rushed. The table setting and decor was beautiful. Lori and Paul were professional, kind and reliable.

Thanks to Paul and Lori our wedding was such a success !!! Our venue had very limited kitchen privileges but Paul pulled off a wonderful meal that our guests raved about. From appetizers to filet mignon, they did it all. The best thing is that Paul and Lori are the nicest people to work with, we felt like they were part of the family :) You'll be happy if you hire them for your party big or small !!!

    Graduated from the Culinary Institute of America.

  • What questions should customers think through before talking to professionals about their project?

    Our smoking process is very labor intensive. We smoke our meats using hardwoods, such as apple and cherry. Our pulled pork takes 10-12 hours to cook. Smoked brisket takes 14 hours. Everything is handmade with the freshest ingredients.
