I've been deeply immersed in the food and beverage culinary world since I was just 16 years old, and now, at 35, I can confidently say that I am a phenomenal choice when it comes to catering. Over the years, I've bussed tables, hosted, washed dishes, worked as a sous chef, headed the kitchen, managed restaurants, and even ventured into restaurant ownership. This extensive journey has given me a comprehensive understanding of every aspect of the culinary profession. From the art of cooking to the intricacies of logistics, service, and management, I've honed my skills to ensure a seamless and unforgettable catering experience. - How did you get started doing this type of work?
My journey as a catering company owner and chef has been nothing short of remarkable. It all began when I was just 16, a wide-eyed teenager, who started by bussing tables, then waiting tables, and slowly honing my culinary skills. After college, I embarked on an unexpected detour, spending 8 years as a quality director in an aerospace/automotive manufacturing company. Yet, my love for food remained unwavering, a flame that never dimmed. This passion led me to take a significant leap, leaving Greenville, South Carolina, behind to venture to West Palm Beach, Florida, where me and my business partner opened Clean Eatz, a meal plan and healthy cafe-based company. There, I yearned to infuse my unique touch into the world of cuisine. Today, I stand as the proud owner of The Culinary Tailor, a catering company specializing in crafting unforgettable experiences for events of all sizes. This journey is not just about culinary expertise; it's a testament to the unwavering dedication and passion that has fueled my life's purpose. I'm deeply grateful for the opportunities and successes it has bestowed upon me, and I'm excited to continue sharing the heart and soul of my culinary world with others.
- Describe a recent project you are fond of. How long did it take?
Recently, I had the pleasure of catering a beautiful wedding for 85 guests, and it was an experience that truly touched my heart as a chef. The bride and groom were a delightful couple who had a strong connection to the food they wanted for their special day. The menu was a reflection of their shared love for both traditional and modern flavors. We started with a selection of elegant appetizers, including delicate bruschettas and miniature crab cakes. For the main course, we served a duo of perfectly cooked salmon and tender filet mignon, accompanied by a medley of seasonal vegetables and creamy garlic mashed potatoes. What made this wedding catering so memorable was the couple's commitment to using locally sourced, organic ingredients, which resonated with my philosophy as a chef. It allowed me to showcase the region's finest produce and highlight the quality of the dishes. The bride and groom's enthusiasm for supporting local farmers and sustainable practices was truly inspiring. Additionally, seeing the smiles on the faces of the guests as they enjoyed each course was immensely rewarding.
